This is the best way to Grill a Skirt Steak

Ingredients

- 1.6kg skirt steak
- 1 tbsp olive oil
- 1 1/2 tbsp soy sauce
- 1 1/2 tsp Worcestershire sauce
- 1 tbsp dried Mexican oregano
- 2 cloves garlic, finely grated
- 1 orange, juice and zest
- 3/4 tsp salt
- 1/2 tsp ground black pepper

Method

1. Add the olive oil, soy sauce, Worcestershire sauce, Mexican oregano, garlic, orange zest, orange juice, salt and pepper to an oven tray and mix well.
2. Add the skirt steak and massage the marinade into the meat. Marinate in the fridge for 4 hours.
3. Preheat a charcoal BBQ and wait for the embers to glow red hot. Remove the meat from the marinade and pat dry with a paper towel. Sear hot and fast on both sides until it reaches medium rare.
4. Rest the steak for 10 minutes before carving. Slice the skirt steak with the grain into 4-5 pieces. Rotate the pieces 90ยบ then carve into thin strips against the grain.
