Pasta:
• 400g mac and cheese pasta
• Water for boiling
• 1 tbsp salt

Cheese Sauce:
• 50g butter
• 50g flour
• 750ml milk
• 200g grated cheddar cheese
• 100g grated mozzarella cheese
• ½ tsp salt
• ½ tsp black pepper
• 1 tsp paprika
• A pinch of nutmeg (optional)

Topping with Truffles and Mushrooms:
• Sliced ​​fresh mushrooms
• 1 tbsp mushroom truffle paste
• ½ cup milk
• 1 tsp balsamic vinegar

Topping:
• Crushed focaccia bread
• Parsley leaves

1. In a pot over medium heat, bring water to a boil, add salt, and cook the pasta according to package directions. Drain.
2. In a saucepan, melt the butter over medium heat.
3. Add the flour and stir until it absorbs the butter.
4. Gradually add the milk, stirring constantly.
5. Let the sauce simmer gently until it thickens.
6. Add salt, black pepper, paprika, and nutmeg.
7. Add the cheese and stir until melted.
8. Add the pasta and stir well.
9. In a skillet over medium heat, sauté the fresh mushrooms.
10. Add the mushroom truffle mix, yogurt, and balsamic vinegar, and let them cook together.
11. Pour the mushroom mixture over the mac and cheese.
12. Garnish with crushed focaccia bread and parsley leaves.
13. Serve hot.
