雞蛋是國人日常最重要的蛋白來源，但供應容易受禽流感影響，產能受母雞生長週期限制，價格時常劇烈波動。中國同時推動三條技術路線：植物基仿蛋運用豆類蛋白模擬雞蛋口感；AI 分子數據庫快速匹配植物原料配比；精密發酵透過改造酵母，生產和天然分子完全一致的卵清蛋白。短期內完整食用雞蛋尚無法被複製，但食品工業中的隱形雞蛋成分已經開始逐步替換。這場技術突破，也為國家蛋白糧食安全提供全新的解決思路。

Eggs are one of Chinese people’s most important daily‑protein sources. Yet egg supply is vulnerable to avian influenza. Production is restricted by hens’ growth cycle, leading to frequent sharp price swings. China advances three technical paths simultaneously: plant‑based egg substitutes use bean protein to mimic egg texture; AI molecular database rapidly matches plant‑material formulas; precision fermentation modifies yeast to produce ovalbumin identical to natural egg‑white protein. Whole edible eggs cannot be fully replicated in the short term, yet invisible egg ingredients used in food‑processing are gradually being replaced. This technological breakthrough offers brand‑new solutions for national protein‑food security.
