No rare dry-aged prime cut or impossible wagyu. Just heavy industrial vacuum-sealed plastic fresh off the bulk pallets of a Costco warehouse. A test of raw discipline. The message was clear without being written: if I cannot unlock perfection from a mass-market cut of wholesale pork belly, I have no business touching what comes next.
In the dead quiet of the safehouse, the blade does its work.
A sharp slice through the heavy polymer, the methodical puncture of the skin, the dark perfume of five-spice and wine, and blistering heat behind the oven door. The result is pure Cantonese Siu Yuk. Golden armor that groans beneath the steel edge, yielding tender layers flanked by crisp bok choy.
