Tomahawk Steak with Chimichurri | Midnight Kitchen | Cooking & Eating ASMR
The butcher shop was already closed when I arrived.
One light remained above the worn wooden block. Beneath it, another package wrapped in brown paper and tied with string. No knock this time. No delivery to the safehouse. This time, I had come to collect.
After the pork belly, I’d told myself another package would mean I’d passed.
The Butcher had left no congratulations. Just a tomahawk steak, but this time a small card accompanied it.
“Medium Rare.”
— The Table
The first test had left the decisions to me. This time, someone had specified the result. I still don’t know who sits at The Table, but whoever wrote that note expects to be understood.
Back in the quiet of the safehouse, the work begins.
Salt worked into the surface. Herbs, garlic, and onion cut down beneath the blade for a sharp green chimichurri. The slow heat of the oven gives way to hot iron, rising smoke, and butter foaming around garlic and rosemary.
The crust darkens. The bone becomes a handle. Every turn exposes another surface to the heat.
Then comes the cut that answers the card.
A browned edge giving way to a warm pink center. Thick slices laid across the board, their juices catching the light. Chimichurri gathers in the shallow cuts.
I take the first bite before anyone else can judge it.
