S’mores Cookies with Hershey’s Chocolate

Soft cookies with graham cracker crumbs, melted Hershey’s milk chocolate, and gooey marshmallow tops.

**Makes:** 18 cookies
**Prep:** 15 minutes · **Chill:** 30 minutes · **Bake:** 11–13 minutes

Ingredients

- ½ cup (113 g) unsalted butter, softened
- ½ cup (100 g) packed light brown sugar
- ¼ cup (50 g) granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1¼ cups (156 g) all-purpose flour
- ½ cup (50 g) finely crushed graham cracker crumbs
- ½ teaspoon baking soda
- ½ teaspoon salt
- 3 standard Hershey’s milk chocolate bars (1.55 oz / 43 g each), divided
- About 1 cup mini marshmallows

Method

1. **Make the dough.** Beat the butter and both sugars for about 2 minutes, until creamy. Beat in the egg and vanilla.

2. **Add the dry ingredients.** In a separate bowl, whisk together the flour, graham cracker crumbs, baking soda, and salt. Mix into the butter mixture just until combined.

3. **Add the chocolate and chill.** Roughly chop 2 Hershey’s bars and fold them into the dough. Refrigerate for 30 minutes. Reserve the remaining bar for topping.

4. **Prepare to bake.** Heat the oven to **350°F (175°C)**. Line baking sheets with parchment paper. Scoop the dough into 18 balls, about 2 generous tablespoons each, and place them 3 inches apart.

5. **Bake.** Bake for **9–10 minutes**, until the edges are set but the centers still look slightly underdone.

6. **Add marshmallows.** Remove the tray and gently press 4–5 mini marshmallows into the top of each cookie. Return to the oven for **2–3 minutes**, until the marshmallows puff and soften.

7. **Finish with Hershey’s.** Break the reserved chocolate bar into small pieces and gently press them into the warm cookies immediately after baking.

8. **Let them set.** Cool on the baking sheet for 10 minutes before transferring to a rack.

**Tip:** Keep the marshmallows on top, away from the cookie edges. Adding them near the end helps prevent them from melting onto the baking sheet.
