Construction Process
01
In a large bowl, combine the ginger juice, maesil-cheong, cucumber juice, lemon juice, salt, and black pepper to make the marinade.
02
Add the pork belly to the marinade and let it sit for 20 minutes.
03
While the pork is marinating, drain the soaked green onions in a sieve, remove the excess water, and cut them into bite-sized pieces.
04
Place the marinated pork belly in a preheated pan and cook over medium heat.
05
Continue cooking over medium heat until the pork is nicely browned and most of the fat has rendered.
06
Finish by lightly torching the pork to add a smoky flavor.
07
Arrange the four lettuce leaves on a serving plate, placing them in the north, south, east, and west directions.
08
Pile the pork belly bulgogi attractively in the center of the plate.
09
Top with the shredded green onions to finish.

Cooking the pork thoroughly allows the excess fat to render, creating a lighter and cleaner taste.
The smoky aroma from the torch adds even deeper flavor.
Serve it with fresh lettuce and crisp green onions for an even more refreshing experience.
