#ChiveJeon #CrispyKoreanPancake #RobynsCookTable
Have you ever placed a freshly fried jeon on a plate only to find it already soggy?
That's not your cooking skill — it's the batter.
Using buchimgaru (Korean pancake mix) alone acts as glue, not a crisping agent.
Today I'll show you the one ratio that keeps chive jeon crispy for good.
[Ingredients] (Makes 2 pancakes — 1 tuna + 1 whelk)
▸ Garlic chives — 1 bunch
▸ Cheongyang chili pepper — 5–6
▸ Garlic — 5–6 cloves
▸ Canned tuna (135 g) — 1
▸ Canned whelk — 1
▸ Potato starch — 75 g (7 Tbsp)
▸ Buchimgaru (pancake mix) — 120 g (10 Tbsp)
▸ Sambun stock sachets — 3
▸ Baekse curry powder — 2 pieces
▸ Lard (pork fat) — generous amount
▸ Ice water — as needed
[Method]
1. Cut chives 5 mm–1 cm wide.
2. Halve cheongyang chili, mince finely.
3. Crush garlic, chop roughly.
4. Drain tuna oil; drain whelk liquid.
5. Slice whelk into rounds.
6. Toss vegetables with starch, pancake mix, stock & curry first.
7. Add ice water little by little to adjust consistency.
8. Split batter in half; mix tuna into one, whelk into other.
9. Heat generous lard in pan, cook on medium-low.
10. Once one side is golden, flip once — never press down.
💡 Three Standards from Today
① Season with natural stock only — no soy sauce dipping needed.
② Batter should barely coat the chives — the filling is the star, not the dough.
③ Don't press the pancake; let it crisp on low heat, flip only once.
🔖 To our Robyn's Cook Table family,
Soggy jeon was never about your skill — it was about batter ratio and oil amount.
Potato starch handles crispness; pancake mix handles binding.
With this one standard, every pancake you make from now on stays crispy.
And please try the whelk version at least once.
If you've only used tuna, you'll be genuinely surprised.
